Birria Tacos

Delicious slow-cooked birria tacos infused with rich spices and tender meat, served with corn tortillas and garnished with cilantro and onions.

Ingredients

  • 2 lbs beef chuck roast
  • 1 lb lamb shoulder (optional)
  • 4 cups beef broth
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 23 dried guajillo chiles
  • 23 dried ancho chiles
  • 1 tsp cumin
  • 1 tsp oregano
  • Salt and pepper to taste
  • Corn tortillas
  • Chopped cilantro and onion for garnish
  • Lime wedges for serving

Instructions

  1. Toast the dried chiles in a dry pan over medium heat until fragrant, about 2-3 minutes. Be careful not to burn them! After toasting, soak the chiles in hot water for about 20 minutes until softened.
  2. Blend the soaked chiles, garlic, onion, cumin, oregano, and a bit of the soaking water in a blender until smooth.
  3. Combine the cubed beef and lamb (if using) in a large pot. Pour in the beef broth and the blended paste, then season with salt and pepper.
  4. Simmer the mixture over medium heat. Cover and reduce to low, simmering for 2-3 hours until the meat is tender.
  5. Shred the meat using two forks and return it to the pot to soak in the juices.
  6. Serve warm corn tortillas filled with shredded meat, garnished with cilantro, onion, lime wedges, and a side of consommé.

Notes

For best flavor, use well-marbled cuts of beef and lamb. You can also adjust spice levels according to your liking.
