  • 2 lbs beef chuck roast
  • 2 cups beef broth
  • 4 dried guajillo chiles
  • 2 dried ancho chiles
  • 1 onion, chopped
  • 4 cloves garlic
  • 1 tsp cumin
  • 1 tsp oregano
  • Salt and pepper to taste
  • Corn tortillas
  • Chopped onions and cilantro for garnish
  • Lime wedges for serving

Instructions

  1. Combine the beef, beef broth, guajillo and ancho chiles, chopped onion, garlic, cumin, oregano, salt, and pepper in a pot.
  2. Bring the mixture to a boil over medium-high heat, stirring occasionally.
  3. Reduce the heat, cover, and allow it to simmer for 2-3 hours until the meat is tender.
  4. Remove the meat from the pot once tender, let cool, and shred it with two forks.
  5. Blend the remaining cooking liquid and spices in the pot until smooth to create a flavorful sauce.
  6. Heat a skillet over medium-high heat, dip the corn tortillas into the sauce, and warm them slightly.
  7. Place the tortillas back into the skillet, add shredded beef, and cook until the tortillas are crispy.
  8. Serve garnished with chopped onions, cilantro, and a squeeze of lime.

Notes

Consider adding toppings like pickled radishes or jalapeños for an added crunch.
