Indulgent yet guilt-free brownies made with black beans for a fudgy, rich treat.

Ingredients

  • 1 can black beans, drained and rinsed
  • 1/2 cup cocoa powder
  • 1/4 cup maple syrup
  • 1/4 cup peanut butter or almond butter
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • Chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease an 8×8 inch baking dish.
  2. In a blender or food processor, combine the black beans, cocoa powder, maple syrup, peanut butter, eggs, vanilla extract, baking powder, and salt. Blend until smooth.
  3. Pour the batter into the prepared baking dish and sprinkle chocolate chips on top if desired.
  4. Bake for 25-30 minutes, or until a toothpick comes out clean.
  5. Allow the brownies to cool before slicing into squares.

Notes

Store leftovers in an airtight container at room temperature for up to 4 days or refrigerate for about a week.
