Delicious and comforting black bean quesadillas filled with melted cheese and fresh vegetables.

Ingredients

  • 1 can black beans, drained and rinsed
  • 1 cup shredded cheese (cheddar, mozzarella, or a blend)
  • 4 flour tortillas
  • 1/2 cup diced bell peppers
  • 1/2 cup diced onions
  • 1 tsp cumin
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • Oil for cooking

Instructions

  1. Gather & mix the filling: In a mixing bowl, combine black beans, shredded cheese, bell peppers, onions, cumin, garlic powder, salt, and pepper. Mix everything thoroughly until well combined.
  2. Heat the skillet: Heat a skillet over medium heat and add a little oil. You’ll want just enough to coat the bottom.
  3. Prepare the tortilla: Place a tortilla on the skillet and spread some of the bean mixture over one half of the tortilla.
  4. Cook to perfection: Fold the tortilla over and cook for 2-3 minutes on each side until golden brown and the cheese is melted.
  5. Repeat & satisfy: Repeat with the remaining tortillas and filling, ensuring each quesadilla gets the same love and attention.
  6. Serve warm: Cut the quesadillas into wedges and serve while warm, enjoy the melty goodness!

Notes

These quesadillas are great with salsa, guacamole, or sour cream. Store leftovers in an airtight container for up to 3 days.
