A delightful layered chocolate cake with whipped cream and cherries, perfect for any celebration.

Ingredients

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 jar morello cherries, drained
  • 2 cups heavy whipping cream
  • 1/4 cup powdered sugar
  • Chocolate shavings (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Combine flour, sugar, cocoa powder, baking powder, baking soda, and salt in a large mixing bowl.
  3. Mix the eggs, milk, vegetable oil, and vanilla extract into the dry ingredients until well combined.
  4. Incorporate boiling water carefully until the batter is thin.
  5. Divide the batter evenly between the prepared pans.
  6. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  7. Cool the cakes in the pans for about 10 minutes, then transfer to a wire rack to cool completely.
  8. Whip the heavy cream with powdered sugar until stiff peaks form.
  9. Assemble one cake layer on a serving plate. Spread with whipped cream and top with cherries.
  10. Complete the layering with the second cake layer and cover with remaining whipped cream.
  11. Garnish with chocolate shavings and additional cherries if desired.
  12. Slice and serve to delighted guests.

Notes

Store leftovers in an airtight container for 3-4 days or freeze individual slices for up to 3 months.
