Fresh Light BLT Chicken Salad Lettuce Wraps

A lighter twist on the classic BLT, these chicken salad lettuce wraps are packed with flavor, low in carbs, and high in protein.

Ingredients

  • 2 cups cooked chicken breast, diced
  • 4 slices bacon, cooked and crumbled
  • 8 leaves romaine lettuce
  • 1 medium tomato, diced
  • 1/4 cup red onion, finely chopped
  • 2 tablespoons light mayonnaise
  • 2 tablespoons plain Greek yogurt
  • 1/2 avocado, diced
  • 1 teaspoon lemon juice
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon sea salt
  • 1 tablespoon chopped fresh chives

Instructions

  1. Cook the bacon in a skillet over medium heat until crispy. Drain on paper towels and crumble when cool.
  2. Add the diced chicken, crumbled bacon, diced tomato, finely chopped onion, diced avocado, light mayonnaise, Greek yogurt, lemon juice, garlic powder, black pepper, and sea salt to a bowl.
  3. Stir gently until combined, taking care not to mash the avocado too much.
  4. Arrange the romaine lettuce leaves on a platter and spoon the chicken salad mixture onto each leaf.
  5. Sprinkle with chopped chives and serve immediately.

Notes

Store any leftover chicken salad mixture in an airtight container for up to three days. Keep lettuce separate until serving.
