Deliciously warm blueberry biscuits perfect for breakfast or an afternoon snack.

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, cold and cubed
  • 1/2 cup buttermilk
  • 1 cup fresh blueberries
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons milk (for glaze)
  • 1/2 teaspoon vanilla extract (for glaze)

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, baking powder, salt, and sugar.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Stir in buttermilk and vanilla extract until just combined.
  5. Gently fold in the blueberries.
  6. Turn the dough onto a floured surface and pat it into a 1-inch thick rectangle.
  7. Cut into rounds or squares and place on the prepared baking sheet.
  8. Bake for 15-20 minutes or until golden brown.
  9. For the glaze, whisk together powdered sugar, milk, and vanilla extract until smooth.
  10. Drizzle the glaze over the warm biscuits and serve.

Notes

Ensure the butter is cold for flaky layers. Store leftovers in an airtight container for up to 2 days.
