  • 2 tablespoons caster sugar
  • 1 teaspoon vanilla extract
  • ½ cup blueberries (fresh or thawed if frozen)
  • 1 loaf day-old brioche, sliced thick (8 slices)
  • 1 egg
  • ½ cup milk
  • ½ cup cream
  • 1 teaspoon cinnamon
  • Butter, for frying
  • Extra blueberries
  • Icing sugar, for dusting
  • Maple syrup, for drizzling

Instructions

  1. Prepare the Cheesecake Filling: In a bowl, combine the softened cream cheese, caster sugar, and vanilla extract.
  2. Fold in the Blueberries: Gently fold in the blueberries into the cream cheese mixture.
  3. Mix until Smooth: Stir until the mixture is smooth and well combined.
  4. Slice the Brioche: Slice the brioche into thick 1.5-inch slices, which will be perfect for stuffing.
  5. Create Pockets in Brioche Slices: Using a sharp knife, create a deep pocket in the middle of each slice OR choose to sandwich two slices together for an extra indulgence.
  6. Stuff the Brioche: Fill each brioche slice with 1–2 tablespoons of the cheesecake mixture. If using two slices, press the edges gently to seal them.
  7. Whisk the Egg Mixture: In a shallow dish, whisk together the egg, milk, cream, and cinnamon until well combined.
  8. Heat the Skillet: Heat a large skillet over medium heat and add a small knob of butter, letting it melt and coat the bottom of the pan.
  9. Coat the Brioche: Dip each stuffed slice of brioche into the egg mixture, making sure to coat both sides thoroughly.
  10. Cook the French Toast: Place the dipped brioche slices in the skillet and cook for 3–4 minutes per side, or until they are golden brown and crisp.
  11. Transfer to a Plate: Carefully transfer the cooked slices to a plate, ready for the finishing touches.
  12. Garnish and Serve: Top with icing sugar, extra blueberries, and a generous drizzle of maple syrup. Serve warm and enjoy every decadent bite!

Notes

Use day-old brioche for the best texture. Try adding lemon zest or other fruits for variations.
