A rustic yet elegant Blueberry Galette that celebrates the bounty of summer with juicy blueberries and a flaky crust.

Ingredients

  • 2 cups fresh blueberries
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 6 tablespoons unsalted butter, chilled and diced
  • 1/4 cup ice water
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Combine the all-purpose flour, granulated sugar, and salt.
  3. Cut in the chilled and diced butter until the mixture resembles coarse crumbs.
  4. Stir in the ice water until a dough forms.
  5. Roll out the dough into a rough circle, about 12 inches in diameter.
  6. Place the fresh blueberries in the center, leaving a 1-inch border.
  7. Fold the edges of the dough over the berries.
  8. Brush the edges of the dough with the beaten egg.
  9. Bake for 25-30 minutes or until golden brown.
  10. Cool slightly before slicing and serving.
