A simple and rustic blueberry galette that captures the essence of home baking.

Ingredients

  • 2 cups fresh blueberries
  • 1/2 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 refrigerated pie crust
  • 1 egg (for egg wash)
  • 1 tablespoon butter (optional)
  • Powdered sugar (for serving, optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Mix the blueberries, granulated sugar, cornstarch, vanilla extract, and salt until combined.
  3. Roll out the pie crust on a baking sheet lined with parchment paper.
  4. Spoon the blueberry mixture into the center of the pie crust, leaving a border of about 2 inches.
  5. Fold the edges of the pie crust over the blueberries, pleating as you go.
  6. Brush the crust with the beaten egg and sprinkle lightly with sugar.
  7. Add small pieces of butter to the filling if desired.
  8. Bake for 30-35 minutes until the crust is golden brown and the filling is bubbly.
  9. Cool slightly before dusting with powdered sugar before serving.

Notes

Serve warm with a scoop of vanilla ice cream or whipped cream. Store leftovers at room temperature for up to 2 days or refrigerate for up to a week.
