Light and refreshing Blueberry Lemonade Bars perfect for summer gatherings, combining sweet blueberries and tangy lemon in a delightful dessert.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup butter, softened
  • 1/2 teaspoon salt
  • 1 cup fresh blueberries
  • 2 large eggs
  • 1/2 cup lemon juice
  • 1 tablespoon lemon zest
  • 1/2 cup powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C). Grease an 8×8-inch baking pan.
  2. Combine the flour, granulated sugar, softened butter, and salt in a bowl. Mix until crumbly and press into the bottom of the prepared pan.
  3. Bake the crust for 15 minutes until lightly golden.
  4. Whisk together the eggs, lemon juice, lemon zest, and powdered sugar in a bowl until smooth.
  5. Fold in the blueberries into the lemon mixture evenly.
  6. Pour the blueberry mixture over the baked crust and bake for an additional 20-25 minutes or until set.
  7. Cool completely in the pan, then cut into squares to serve.
