Delicious and fluffy blueberry muffins perfect for breakfast or a snack!

Ingredients

  • 1 cup fresh blueberries
  • 1 1/2 cups all-purpose flour
  • 1/2 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/3 cup vegetable oil
  • 1 large egg
  • 1/3 cup milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 375°F (190°C) and prepare a muffin tin.
  2. Combine the all-purpose flour, sugar, baking powder, and salt in a mixing bowl.
  3. Mix the vegetable oil, egg, milk, and vanilla extract in a separate bowl.
  4. Combine the wet and dry ingredients gently until just mixed.
  5. Fold in the fresh blueberries carefully.
  6. Fill the muffin cups about 2/3 full with batter.
  7. Bake for 20-25 minutes or until a toothpick comes out clean.
  8. Cool the muffins in the tin for a few minutes before transferring to wire racks.

Notes

Store leftovers in an airtight container at room temperature for up to 3 days.
