Fluffy and buttery blueberry muffins bursting with sweet blueberries, perfect for breakfast or as a snack.

  • 1/2 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a muffin tin.
  2. Whisk together the flour, sugar, baking powder, salt, and baking soda in a large bowl.
  3. Mix the melted butter, milk, eggs, and vanilla extract in another bowl until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined, then gently fold in the blueberries.
  5. Divide the batter evenly among the muffin cups, filling each about 2/3 full.
  6. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack.

Notes

Don’t overmix the batter for fluffy muffins; consider adding lemon zest for a refreshing kick.
