Easy and delicious blueberry muffins that are perfect for breakfast or a snack.

Ingredients

  • 1 cup fresh blueberries
  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/3 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup milk

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a muffin tin.
  2. Mix the dry ingredients: flour, sugar, salt, baking powder, and baking soda.
  3. Whisk the wet ingredients: vegetable oil, egg, vanilla extract, and milk.
  4. Combine the wet mixture with the dry ingredients and fold gently.
  5. Fold in the fresh blueberries into the batter.
  6. Fill the greased muffin tin, filling each cup 2/3 full.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Cool in the tin for a few minutes before transferring to a wire rack.

Notes

For best results, use fresh blueberries. Frozen blueberries can be used but may affect the texture.
