Delightful and wholesome muffins packed with protein from cottage cheese, sweetened with honey or maple syrup, and bursting with juicy blueberries.

  • 1 cup cottage cheese
  • 1 cup blueberries (fresh or frozen)
  • 2 cups whole wheat flour
  • 1/2 cup honey or maple syrup
  • 1/2 cup milk (or almond milk)
  • 2 large eggs
  • 1/2 cup unsweetened applesauce
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it.
  2. Mix the cottage cheese, honey (or maple syrup), milk, eggs, applesauce, and vanilla extract until well combined and smooth.
  3. Whisk together the whole wheat flour, baking powder, baking soda, and salt in another bowl.
  4. Combine the dry ingredients into the wet mixture, stirring until just combined.
  5. Fold in the blueberries evenly throughout the batter.
  6. Fill the muffin cups about 3/4 full with the batter.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Cool for a few minutes before transferring to a wire rack to cool completely.

Notes

Store muffins in an airtight container for up to three days, or freeze for up to three months.
