Deliciously fluffy blueberry muffins perfect for breakfast or a snack.

  • 1 cup fresh or frozen blueberries
  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 large egg
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In another bowl, combine the milk, vegetable oil, egg, and vanilla extract. Mix well until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Fold in the blueberries, ensuring they’re evenly distributed through the batter.
  6. Divide the batter evenly among the muffin cups, filling each about two-thirds full.
  7. Bake for about 20-25 minutes, or until a toothpick inserted comes out clean.
  8. Allow the muffins to cool slightly before serving.

Notes

Use fresh baking powder for the best rise. Toss blueberries in flour to prevent sinking.
