Delightful blueberry muffins that are tender, lightly sweetened, and studded with juicy blueberries. Perfect for breakfast, snacks, or a light dessert.

  • 1 1/2 cups all-purpose flour
  • 1/2 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/3 cup vegetable oil
  • 1 large egg
  • 1/3 cup milk
  • 1 cup fresh blueberries

Instructions

  1. Preheat the oven to 400°F (200°C). Grease a muffin tin or line it with parchment muffin liners to prepare for your batter.
  2. Mix the all-purpose flour, sugar, baking powder, and salt in a large bowl until evenly mixed.
  3. Whisk together the vegetable oil, egg, and milk in another bowl until well combined and smooth.
  4. Combine the wet mixture with the dry ingredients. Mix gently until just combined, being careful not to overmix.
  5. Fold in the fresh blueberries, ensuring they are evenly distributed.
  6. Fill the muffin cups about two-thirds full with batter.
  7. Bake for 20-25 minutes, until the tops are golden brown and a toothpick comes out clean.
  8. Cool the muffins in the tin for a few minutes, then transfer to a wire rack to cool completely.

Notes

Don’t overmix the batter. Use fresh blueberries for the best flavor, but frozen can be used directly from the freezer.
