A delightful and convenient breakfast that captures the nostalgic flavors of blueberry pie in a healthy overnight oats format.

Ingredients

  • 1 cup rolled oats
  • 1 cup almond milk (or milk of choice)
  • 1 cup Greek yogurt (or dairy-free alternative)
  • 1 cup fresh or frozen blueberries
  • 2 tablespoons maple syrup or honey
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • A pinch of salt

Instructions

  1. Gather your ingredients.
  2. Mix the wet ingredients: In a large bowl or jar, combine almond milk, Greek yogurt, maple syrup, vanilla extract, and salt. Whisk until blended.
  3. Stir in the dry ingredients: Add rolled oats, cinnamon, and half of the blueberries. Stir well to soak the oats.
  4. Portion it out: Divide mixture into two jars or containers, leaving some space at the top.
  5. Add the remaining blueberries, pressing them gently into the mixture.
  6. Chill in the fridge: Cover jars and refrigerate overnight.
  7. Serve & enjoy: Stir oats in the morning, enjoy cold or warm them if desired. Add toppings if you like!

Notes

Make a few jars at once for easy breakfasts. Store in the fridge for up to 3 days.
