Deliciously simple Blueberry Scones, buttery and flaky, bursting with fresh blueberries for a perfect breakfast treat.

Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1 cup fresh blueberries (or frozen)
  • 1/2 cup heavy cream
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Whisk together the flour, sugar, baking powder, and salt in a large bowl.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Fold in the blueberries gently.
  5. Whisk together the cream, egg, and vanilla in a separate bowl.
  6. Stir the wet ingredients into the dry ingredients until just combined.
  7. Turn the dough out onto a floured surface and pat it into a circle about 1 inch thick.
  8. Cut the dough into wedges and place on a baking sheet lined with parchment paper.
  9. Bake for 15-20 minutes, or until golden brown.
  10. Let the scones cool slightly before serving.

Notes

Serve warm with clotted cream or honey. Can be made with fresh or frozen blueberries.
