Healthy and delicious blueberry yogurt bites, perfect for busy mornings or as a refreshing snack.

Ingredients

  • 1 cup Greek yogurt
  • 1 cup fresh blueberries
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • Granola or nuts for topping (optional)

Instructions

  1. Combine the yogurt mixture: In a mixing bowl, combine Greek yogurt, honey or maple syrup, and vanilla extract. Stir until well mixed.
  2. Prepare the molds: In a silicone ice cube tray or mini muffin cups, add a layer of the yogurt mixture, about 1/2 full.
  3. Add the blueberries: Place fresh blueberries on top of the yogurt in each mold.
  4. Sprinkle on some crunch: If desired, sprinkle granola or chopped nuts on top.
  5. Freeze the bites: Freeze for at least 2-3 hours until solid.
  6. Pop them out: Once frozen, pop the bites out of the molds and store in a resealable bag in the freezer.
  7. Enjoy! Enjoy these as a quick, healthy snack or breakfast option!

Notes

Store in the freezer for up to one month. Use non-stick molds for easy removal.
