Transform fresh red onions into a tangy and flavorful pickled condiment that’s perfect for tacos, sandwiches, and salads.

Ingredients

  • 1 cup white vinegar
  • 1/4 cup sugar
  • 1 tablespoon salt
  • 1 cup water
  • Spices (optional)

Instructions

  1. Slice the onions thinly, aiming for about an eighth of an inch thickness.
  2. Combine the white vinegar, water, sugar, salt, and any spices in a saucepan.
  3. Bring the mixture to a boil, stirring until the sugar dissolves completely.
  4. Pack the sliced onions in a jar, showing off their beautiful colors.
  5. Pour the hot vinegar mixture over the onions, ensuring they are completely covered.
  6. Cool the jar at room temperature before sealing and refrigerating.

Notes

Allow the pickled onions to sit for at least a few hours for optimal flavor, ideally overnight.
