A creamy, one-pan delight with chicken, orzo, and Boursin cheese that makes for a comforting and hearty dinner.

  • 2 cups orzo pasta
  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper, to taste
  • 1 cup broccoli florets
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach, roughly chopped
  • 8 ounces Boursin cheese (any flavor)
  • 3 cups chicken broth
  • 1 cup shredded mozzarella cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Sauté the chicken in a large, oven-safe skillet with olive oil, garlic powder, onion powder, salt, and pepper for 5-7 minutes.
  3. Add the broccoli florets, cherry tomatoes, and spinach; cook for an additional 2-3 minutes.
  4. Pour in the chicken broth and bring to a gentle boil.
  5. Stir in the orzo pasta and dollop in the Boursin cheese, mixing until combined.
  6. Remove from heat and sprinkle mozzarella cheese on top.
  7. Transfer to the oven and bake for 20-25 minutes until the cheese is bubbly and golden brown.
  8. Garnish with fresh parsley before serving.

Notes

Serve with arugula salad or garlic bread. Leftovers can be stored in an airtight container in the fridge for up to 3 days.
