A comforting breakfast burrito filled with eggs, potatoes, and your choice of meat or veggies.

Ingredients

  • 2 large eggs
  • 1/4 cup milk
  • 1/4 cup cooked, diced potatoes
  • 1/4 cup cooked and crumbled sausage or bacon
  • 1/4 cup shredded cheese (cheddar or your choice)
  • 1 medium tortilla
  • Salt and pepper to taste
  • Salsa or hot sauce (optional)

Instructions

  1. Whisk together the eggs and milk in a bowl. Season with salt and pepper to taste.
  2. Scramble the egg mixture in a skillet over medium heat until just set and fluffy.
  3. Add cooked potatoes, crumbled sausage or bacon, and shredded cheese to the eggs, mixing until combined.
  4. Warm the tortilla in another skillet or microwave for a few seconds.
  5. Spoon the egg mixture onto the center of the tortilla, fold in the sides, and roll it up tightly.
  6. Serve with salsa or hot sauce on the side and enjoy!

Notes

For creamier eggs, add a dash of cream instead of milk. Customize with your favorite ingredients for added freshness.
