Crispy breakfast egg rolls filled with scrambled eggs, sausage, cheese, and hash browns for a delightful morning treat.

Ingredients

  • 2 large eggs
  • 1 cup cooked sausage, crumbled
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 cup frozen hash browns, thawed
  • 8 egg roll wrappers
  • Oil for frying
  • Salt and pepper to taste

Instructions

  1. Whisk and season the eggs in a bowl with salt and pepper.
  2. Scramble the eggs in a skillet over medium heat until just set.
  3. Mix the sausage, scrambled eggs, cheese, and hash browns in a large bowl.
  4. Prepare the egg roll wrappers on a clean surface with the filling.
  5. Fold the sides over the filling and roll from the bottom up.
  6. Seal the edges with water to keep the filling secure.
  7. Heat oil in a frying pan over medium heat for frying.
  8. Fry the egg rolls until golden brown and crispy (about 3-4 minutes per side).
  9. Drain on paper towels and serve hot.

Notes

Don’t overfill the egg rolls and feel free to experiment with different fillings.
