Deliciously rolled tortillas filled with eggs, savory sausage, and bright vegetables, topped with cheese and salsa.

Ingredients

  • 8 corn tortillas
  • 6 large eggs
  • 1 cup cooked breakfast sausage or bacon, crumbled
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1 cup diced bell peppers
  • 1 cup diced onions
  • 1 cup salsa
  • Salt and pepper to taste
  • Cooking oil or spray

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Heat a little oil in a large skillet and sauté the onions and bell peppers until soft.
  3. Whisk the eggs in a bowl and season with salt and pepper. Pour into the skillet and cook until just set.
  4. Stir in the sausage or bacon and half of the cheese.
  5. Warm the tortillas slightly to make them pliable.
  6. Fill each tortilla with the egg mixture, roll them up, and place seam-side down in a greased baking dish.
  7. Pour salsa over the top and sprinkle with the remaining cheese.
  8. Bake for about 20-25 minutes until the cheese is bubbly and golden.
  9. Serve warm and enjoy!
