A fun and interactive breakfast recipe featuring sausage links wrapped in fluffy pancakes.

Ingredients

  • 12 cooked breakfast sausage links
  • 1 ½ cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 4 teaspoons baking powder
  • ½ teaspoon fine sea salt
  • 1 â…“ cups buttermilk
  • 1 large egg (well beaten)
  • 4 tablespoons unsalted butter (melted)
  • 1 teaspoon vanilla extract

Instructions

  1. Cook the sausage per the back of the package and set aside.
  2. Whisk together the flour, sugar, baking powder, and salt in a large bowl.
  3. Prepare the wet mixture by whisking together the buttermilk, beaten egg, melted butter, and vanilla in a small bowl.
  4. Combine the wet mixture into the dry ingredients and stir until combined. Let sit for 5 minutes.
  5. Heat a large non-stick skillet over medium heat and spray lightly with cooking spray.
  6. Cook 3 tablespoons of batter in the skillet for about 2-3 minutes until bubbles appear on top, then flip and cook for another 2-3 minutes until golden brown.
  7. Assemble each pancake with a sausage link in the center, roll it up, and set seam side down.
  8. Repeat until all batter and sausage links are used. Serve with syrup.

Notes

For fluffier pancakes, let the batter sit for a little longer. Experiment with different sausage flavors for variety.
