A delightful twist on breakfast, these English Muffin Breakfast Pizzas feature fluffy scrambled eggs, savory cheese, and your choice of crispy bacon or sausage, topped with fresh veggies.

Ingredients

  • 2 English muffins
  • 4 eggs
  • 1 cup shredded cheese
  • 1/2 cup cooked bacon or sausage, crumbled
  • 1/2 cup diced bell peppers
  • 1/2 cup diced tomatoes
  • Salt and pepper to taste
  • Olive oil or cooking spray

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Split each English muffin in half and arrange them on a baking sheet.
  3. Scramble the eggs in a skillet over medium heat, seasoning with salt and pepper.
