A comforting and easy breakfast casserole featuring crispy tater tots, savory sausage, fluffy eggs, and melted cheddar cheese, perfect for feeding a crowd.

  • 1 package frozen tater tots
  • 1 pound breakfast sausage
  • 5 large eggs
  • 1 cup milk
  • 2 cups shredded cheddar cheese
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Chopped green onions for garnish (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Brown the breakfast sausage in a skillet over medium heat until browned, then drain excess fat.
  3. Whisk together the eggs, milk, garlic powder, salt, and pepper in a bowl.
  4. Layer tater tots at the bottom of a greased 9×13 inch baking dish.
  5. Add the cooked sausage over the tater tots.
  6. Pour the egg mixture over the sausage and tater tots.
  7. Sprinkle shredded cheddar cheese generously on top.
  8. Bake in the preheated oven for 30-35 minutes or until the egg is set and the cheese is golden and bubbly.
  9. Cool slightly before serving and garnish with chopped green onions, if desired.

Notes

This casserole can be made ahead of time and stored in the fridge overnight. For a variation, consider adding jalapeños or using spicy sausage.
