  • 1/2 cup Buffalo sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup chopped green onions
  • 1 package egg roll wrappers
  • Oil for frying
  • Ranch or blue cheese dressing for serving

Instructions

  1. Combine ingredients: In a large bowl, combine the shredded chicken, Buffalo sauce, mozzarella cheese, and green onions. Mix well until everything is coated in that deliciously spicy sauce.
  2. Prep the egg rolls: Place an egg roll wrapper on a clean surface. Spoon a small amount of the chicken mixture onto the center of the wrapper and fold it according to the package instructions. Ensure you seal the edges well so the filling doesn’t escape during frying.
  3. Heat the oil: Heat oil in a deep fryer or large skillet over medium heat. You want the oil nice and hot—ideal for achieving that crispy exterior.
  4. Fry to perfection: Fry the egg rolls in batches until golden brown and crispy, about 3-4 minutes per side. Make sure not to overcrowd the skillet, as it can lower the oil temperature.
  5. Drain and serve: Once fried, drain the egg rolls on paper towels to get rid of excess oil. Serve them hot with a side of ranch or blue cheese dressing for dipping.

Notes

These egg rolls can be adjusted for spice level and can be made with rotisserie chicken for convenience.
