A comforting and spicy twist on classic mac and cheese with Buffalo sauce and shredded chicken.

  • 8 ounces elbow macaroni
  • 2 cups cooked chicken, shredded
  • 1 cup buffalo sauce
  • 2 cups shredded cheddar cheese
  • 1 cup milk
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Optional: green onions for garnish

Instructions

  1. Cook the macaroni according to package instructions, usually about 7-8 minutes until al dente. Drain and set aside.
  2. Melt the butter in a medium-sized saucepan over medium heat.
  3. Stir in the flour, garlic powder, and onion powder, cooking for about 1 minute until fragrant.
  4. Gradually whisk in the milk and buffalo sauce, stirring constantly until the sauce thickens, about 3-5 minutes.
  5. Remove from heat and stir in 1 cup of shredded cheddar cheese until melted.
  6. Combine the cooked macaroni, shredded chicken, and cheese sauce in a large bowl.
  7. Transfer the mixture to a baking dish and sprinkle the remaining cheddar cheese on top. Bake in a preheated oven at 350°F (175°C) for about 20 minutes until bubbly.
  8. Let cool for a moment, then garnish with green onions before serving hot.

Notes

For flavor variations, consider adding bell peppers or using a different cheese blend.
