A delicious dish combining smoky spice with creamy comfort, perfect for an easy weeknight dinner.

Ingredients

Scale
  • 1 lb boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 cup uncooked white rice
  • 2 cups chicken broth
  • 1/2 cup buffalo sauce
  • 1/2 cup ranch dressing
  • Shredded cheddar cheese (for topping)
  • Green onions (for garnish)

Instructions

  1. Prepare the Rice: In a medium saucepan, combine uncooked rice with chicken broth. Bring to a boil, then reduce heat, cover, and let it simmer for 18–20 minutes until tender.
  2. Season and Sauté the Chicken: While the rice is cooking, heat olive oil in a large skillet over medium heat. Season the chicken with garlic powder, onion powder, salt, and pepper. Cook for about 6–7 minutes on each side until fully cooked.
  3. Create the Buffalo Ranch Mixture: In a bowl, mix together buffalo sauce and ranch dressing.
  4. Coat the Chicken: Slice the rested chicken into bite-sized pieces and toss in the buffalo ranch mixture until well coated.
  5. Fluff the Rice: After the rice has finished cooking, fluff it with a fork to keep it light and airy.
  6. Assemble the Dish: Top the rice with the buffalo ranch chicken, then sprinkle generously with shredded cheddar cheese.
  7. Garnish & Serve: Finish with chopped green onions for a touch of freshness.

Notes

Make sure to let the chicken rest after cooking; adjust buffalo sauce based on spice preference.
