Delicious and easy-to-make butterscotch toffee cookie bars that combine the comforting flavors of brown sugar, warm vanilla, and crunchy toffee bits.

  • 1 cup brown sugar
  • 1/2 cup unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup toffee bits
  • 1 cup butterscotch chips

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×9 inch baking pan.
  2. In a large mixing bowl, combine the melted butter and brown sugar until well blended.
  3. Stir in the egg and vanilla until fully incorporated.
  4. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry mixture to the wet mixture, mixing until just combined.
  5. Fold in the toffee bits and butterscotch chips.
  6. Spread the mixture into the prepared baking pan and smooth the top.
  7. Bake for about 25-30 minutes, or until the edges are golden brown and the center has slightly set.
  8. Allow to cool in the pan before cutting into bars.

Notes

Serve with vanilla ice cream or whipped cream for an indulgent treat. Store leftovers in an airtight container at room temperature for up to five days or freeze for up to three months.
