A comforting and flavorful one-pot pasta dish featuring Cajun-spiced chicken and BBQ sauce, perfect for family dinners.

  • 1 lb cooked chicken (shredded or diced)
  • 12 oz penne or rotini pasta
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 3/4 cup BBQ sauce
  • 1 tbsp Cajun seasoning
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 1/2 cup cream cheese
  • 1 tbsp olive oil
  • Chopped parsley (optional, for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add cooked chicken and season with Cajun seasoning, garlic powder, salt, and pepper. Cook for 2–3 minutes until heated through.
  3. Pour in chicken broth, heavy cream, BBQ sauce, and uncooked pasta. Bring this fabulous mix to a boil.
  4. Reduce heat to low and simmer while stirring occasionally until the pasta is cooked (about 10–12 minutes).
  5. Stir in cheddar cheese and cream cheese until fully melted, creating a creamy sauce.
  6. Serve warm, garnished with chopped parsley if desired.

Notes

For an extra kick, consider adding diced jalapeños or a splash of hot sauce. If the pasta seems stiff upon reheating, add a splash of chicken broth or cream.
