A simplified version of creamy chicken Alfredo infused with Cajun spices, perfect for a weeknight meal.

Ingredients

Scale
  • 1 lb boneless, skinless chicken breasts
  • 2 tablespoons Cajun seasoning
  • 8 oz fettuccine or pasta of choice
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Fresh parsley for garnish

Instructions

  1. Season the chicken breasts with Cajun seasoning, salt, and pepper, ensuring every piece is well-coated with those vibrant spices.
  2. Heat a tablespoon of olive oil in a large skillet over medium-high heat. Add the seasoned chicken and sear for about 5-7 minutes on each side or until golden brown. Once cooked, remove the chicken from the skillet and set aside.
  3. In the same skillet, toss in the minced garlic and sauté for about 30 seconds until fragrant, being cautious not to burn it.
  4. Add the chicken broth to the skillet, scraping up all those delicious browned bits from the bottom. Bring it to a gentle simmer to unlock even more flavor.
  5. Stir in the heavy cream and let it simmer gently, allowing the sauce to thicken slightly for a creamy texture that envelopes every strand of pasta.
  6. Cook the fettuccine. Cook according to the package instructions until al dente, stirring occasionally to ensure it mixes well with the sauce.
  7. Slice the cooked chicken and return it to the skillet. Gently stir in the grated Parmesan cheese until it’s melted and creates a luscious sauce that clings to the noodles.
  8. Finally, garnish your masterpiece with a sprinkle of fresh parsley before dishing it out onto plates.

Notes

This dish stores beautifully! Place any leftovers in an airtight container in the fridge for up to 3 days. To reheat, simply warm it gently on the stove or in the microwave, adding a splash of chicken broth if needed to reinvigorate its creamy goodness.
