A comforting and flavorful bowl of pasta with bold Cajun spices, tender chicken, and a creamy sauce.

  • 2 boneless, skinless chicken breasts
  • 8 ounces pasta (like penne or fettuccine)
  • 2 tablespoons Cajun seasoning
  • 1 tablespoon olive oil
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Add salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Cook the pasta according to the package instructions. Drain and set aside for use later.
  2. Season the boneless, skinless chicken breasts with Cajun seasoning, ensuring all sides are well covered.
  3. Sauté the chicken in a large skillet with olive oil over medium heat for 6-7 minutes on each side until cooked thoroughly and golden brown. Remove from the skillet and slice into strips.
  4. Sauté the sliced red and green bell peppers, onion, and minced garlic in the same skillet until softened and aromatic.
  5. Simmer the heavy cream and bring it to a gentle simmer. Add the grated Parmesan cheese, stirring until melted and the sauce is smooth.
  6. Combine the cooked pasta and sliced chicken back into the skillet, tossing everything in the creamy sauce and seasoning to taste.
  7. Serve hot, garnished with freshly chopped parsley.

Notes

This dish pairs beautifully with a garden salad and crusty bread. Leftovers can be refrigerated for 3 days.
