A creamy and spicy pasta dish that brings the flavors of Louisiana to your dinner table.

Ingredients

Scale
  • 2 boneless, skinless chicken breasts
  • 2 tablespoons Cajun seasoning
  • 8 oz penne pasta
  • 1 tablespoon olive oil
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Season the chicken breasts generously with Cajun seasoning, ensuring every side is covered in those bold spices. Let those flavors soak in for a few minutes!
  2. Bring a pot of salted water to a boil and cook the penne pasta according to the package instructions until al dente. Reserve about half a cup of pasta water, then drain and set aside.
  3. In a large skillet, warm the olive oil over medium heat. The aroma of the olive oil sizzling is a prelude to the deliciousness to come!
  4. Add the seasoned chicken to the skillet and cook until browned and fully cooked, about 5-7 minutes on each side. Once done, remove the chicken from the skillet and let it rest before slicing into bite-sized pieces.
  5. Toss in the sliced red and green bell peppers. Sauté until they soften, soaking up the flavor left behind by the chicken and becoming vibrant and tender.
  6. Reduce the heat to low and pour in the heavy cream, followed by stirring in the grated Parmesan cheese. Mix until you have a luscious creamy sauce that coats the back of a spoon.
  7. Add the cooked penne pasta and sliced chicken to the skillet. Toss everything together, ensuring each piece is covered in that creamy Cajun goodness. If the sauce is too thick, add a splash of reserved pasta water.
  8. Season the dish with salt and pepper to your liking. Give it one last gentle stir to combine all the flavors together.
  9. Serve this tantalizing dish hot, garnished with freshly chopped parsley for a pop of color and freshness.
