A vibrant one-pan dish filled with spicy Cajun sausage, seasoned rice, and colorful vegetables.

  • 1 pound Cajun sausage, sliced
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 can diced tomatoes with green chilies
  • 1 teaspoon Cajun seasoning
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Brown the sausage in a large skillet with a bit of oil over medium heat until browned.
  2. Sauté the diced onion, bell pepper, and garlic in the skillet until softened.
  3. Combine the rice, chicken broth, diced tomatoes, Cajun seasoning, salt, and pepper in the skillet.
  4. Simmer by bringing the mixture to a boil, then reducing the heat and covering the skillet. Cook for about 20 minutes, or until the rice is tender and the liquid is absorbed.
  5. Fluff the rice with a fork and garnish with chopped green onions before serving.

Notes

For extra customization, feel free to swap out the sausage or add in vegetables like frozen peas or fresh spinach.
