A vibrant Cajun shrimp dish bursting with flavor, perfect for a quick weeknight dinner or a special gathering.

  • 2 tablespoons Cajun seasoning
  • 2 tablespoons olive oil
  • 1 bell pepper, diced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Season the shrimp: In a bowl, toss the shrimp with Cajun seasoning until evenly coated.
  2. Heat the olive oil: Heat the olive oil in a skillet over medium heat.
  3. Sauté the onions and bell peppers: Add the diced onions and bell peppers to the skillet and sauté until they soften, about 3–5 minutes.
  4. Infuse the garlic: Stir in the minced garlic and cook for another minute.
  5. Cook the shrimp: Add the seasoned shrimp to the skillet and cook until they turn pink and opaque, about 3–4 minutes.
  6. Add cherry tomatoes: Add the halved cherry tomatoes and cook for an additional 2–3 minutes.
  7. Final seasoning and serving: Season with salt and pepper to taste, garnish with chopped parsley, and serve.

Notes

Serve with rice or grits, and add a lemon wedge for extra flavor. Store leftovers in an airtight container in the refrigerator for up to 2 days.
