A vibrant dish combining grilled chicken with luscious avocado, lime, and spices, perfect for summertime grilling.

Ingredients

Scale
  • 4 chicken breasts
  • 2 ripe avocados
  • 1 cup cherry tomatoes, halved
  • 2 limes, juiced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Create the Flavorful Marinade: In a bowl, whisk together the lime juice, olive oil, garlic powder, cumin, salt, and pepper to create the marinade.
  2. Marinate the Chicken: Place the chicken breasts into a resealable bag, pour the marinade over them, and seal the bag. Let the chicken marinate in the refrigerator for at least 30 minutes.
  3. Preheat the Grill: Preheat your grill to medium-high heat – we want it nice and hot for a perfect sear.
  4. Grill the Chicken: Place your marinated chicken on the grill and cook for 6-7 minutes on each side, or until the chicken is cooked through, with beautiful grill marks.
  5. Prepare Toppings While Grilling: While the chicken is grilling, take the opportunity to slice the avocados and prepare the cherry tomatoes for a fresh topping.
  6. Assemble Your Masterpiece: Once the chicken is done, carefully lay slices of ripe avocado and halved cherry tomatoes on top of the grilled chicken.
  7. Garnish and Serve: Finish with a sprinkle of fresh cilantro to add a vibrant touch, and then serve immediately to enjoy at its finest.

Notes

Marinating longer enhances flavor. Store leftover chicken in the fridge for up to 3 days.
