A delightful fusion of juicy chicken, fresh mozzarella, cherry tomatoes, and fragrant basil that transports you to Italy with each bite.

Ingredients

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 2 cups cherry tomatoes, halved
  • 8 ounces fresh mozzarella cheese, sliced
  • 1 cup fresh basil leaves
  • Balsamic glaze, for drizzling

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season the chicken breasts generously with salt and pepper.
  3. Sear the chicken breasts in a skillet with olive oil for 3-4 minutes on each side.
  4. Top each breast with halved cherry tomatoes and slices of mozzarella cheese.
  5. Bake for 20-25 minutes until cooked through and cheese is melted.
  6. Finish with fresh basil leaves and a drizzle of balsamic glaze.

Notes

Pairs well with garlic bread and arugula salad. Store leftovers in an airtight container for 3-4 days.
