A vibrant Caprese Chicken Pasta that combines juicy tomatoes, creamy mozzarella, and flavorful chicken, perfect for summer meals and cozy gatherings.

Ingredients

  • 8 ounces pasta (such as penne or fusilli)
  • 2 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh mozzarella balls, halved
  • 1/4 cup fresh basil, chopped
  • 2 tablespoons balsamic glaze

Instructions

  1. Prepare the pasta according to package instructions until al dente. Once cooked, drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Season chicken breasts with salt and pepper, then cook for about 6-7 minutes on each side until golden brown and cooked through. Remove and slice.
  3. Add halved cherry tomatoes to the skillet and sauté for 3-4 minutes until they soften and burst.
  4. Toss the cooked pasta, sliced chicken, mozzarella, and basil together in the skillet.
  5. Drizzle balsamic glaze over the dish just before serving.
