A vibrant and delightful dish celebrating the fresh flavors of summer with juicy chicken breasts, cherry tomatoes, and mozzarella.

  • 2 boneless, skinless chicken breasts
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh mozzarella balls
  • 1/4 cup fresh basil leaves
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C) to create the perfect environment for that chicken to roast beautifully.
  2. Season the chicken breasts generously with salt and pepper.
  3. Sauté the chicken in a skillet over medium-high heat with olive oil for about 5-7 minutes on each side.
  4. Transfer the browned chicken to a baking dish.
  5. Combine halved cherry tomatoes, mozzarella, basil, balsamic vinegar, and olive oil in a bowl.
  6. Pour this mixture over the chicken.
  7. Bake in the oven for 20-25 minutes until cooked through and reaches 165°F (75°C).
