  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Corn tortillas
  • Chopped onions
  • Chopped cilantro
  • Lime wedges

Instructions

  1. Marinate the Steak: In a mixing bowl, combine olive oil, minced garlic, cumin, chili powder, salt, and pepper. Coat the flank or skirt steak in this mixture, ensuring every inch is covered. Let the steak rest for at least 1 hour (or up to overnight in the fridge).
  2. Grill the Steak: Preheat your grill to high heat. Once hot, place the marinated steak on the grill and cook for 5-7 minutes per side for medium-rare.
  3. Rest and Slice: Once cooked, remove the steak from the grill and let it rest for about 5 minutes. Slice the steak thinly against the grain.
  4. Warm the Corn Tortillas: Using the grill or a hot pan, warm the corn tortillas for about 30 seconds on each side.
  5. Assemble the Tacos: Take a warm tortilla, place a few strips of steak onto it, and top with chopped onions, fresh cilantro, and a squeeze of lime juice.

Notes

Make sure to slice the steak against the grain for maximum tenderness. Marinate overnight for deeper flavor if time allows.
