A tender and flavorful carnitas recipe with bright citrus and warm spices, perfect for tacos or family gatherings.

  • 3 pounds pork shoulder
  • 1 cup orange juice
  • 1/4 cup lime juice
  • 4 cloves garlic, minced
  • 1 large onion, chopped
  • 2 teaspoons cumin
  • 1 tablespoon salt
  • 1 teaspoon pepper
  • 23 bay leaves
  • Water (enough to cover the meat)

Instructions

  1. Prepare the Pork: Cut the pork shoulder into large chunks and season with salt, pepper, and cumin.
  2. Combine Ingredients: In a large pot, combine the seasoned pork, chopped onion, minced garlic, orange juice, lime juice, bay leaves, and enough water to cover the meat.
  3. Simmer to Perfection: Bring the pot to a boil over medium heat, then reduce it to a simmer. Cover and cook for about 2 hours.
  4. Shred the Pork: Remove the pot from heat and shred the pork into bite-sized pieces using two forks.
  5. Crisp Up the Carnitas: Preheat the oven to 400°F (200°C). Spread the shredded pork on a baking sheet and bake for 10-15 minutes until crispy edges form.
  6. Serve and Enjoy: Serve the carnitas in warm corn tortillas with your favorite toppings.

Notes

For added flavor, consider adding a splash of apple cider vinegar to the cooking liquid.
