  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg

  • 4 large eggs
  • 1 cup vegetable oil
  • 3 cups grated carrots
  • 1 cup cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch pan.
  2. Whisk together the flour, granulated sugar, baking powder, baking soda, cinnamon, nutmeg, and salt in a large bowl.
  3. Beat the eggs until light and fluffy, then add the vegetable oil and mix well. Fold in the grated carrots.
  4. Combine the wet and dry ingredients until just mixed, then pour the batter into the prepared pan.
  5. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  6. Mix the softened cream cheese, powdered sugar, and vanilla extract in a bowl until smooth.
  7. Spread the cream cheese mixture evenly over the cooled bars.
  8. Cut into bars and serve.
