Cauliflower Fried Rice

A healthy and delicious twist on traditional fried rice using riced cauliflower and mixed vegetables, perfect for quick weeknight dinners.

Ingredients

  • 1 head cauliflower, riced
  • 2 tablespoons oil
  • 2 eggs, beaten
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 3 green onions, chopped
  • 23 tablespoons soy sauce
  • Salt and pepper to taste

Instructions

  1. Heat the oil in a large pan over medium heat.
  2. Add the riced cauliflower and cook for 3-4 minutes until softened.
  3. Push the cauliflower to one side and scramble the beaten eggs on the other side.
  4. Combine the eggs with the riced cauliflower.
  5. Stir in the mixed vegetables and cook for another 2-3 minutes.
  6. Toss in the green onions, soy sauce, salt, and pepper. Mix well.
  7. Serve hot.

Notes

Customize the veggies to your liking, using bell peppers or broccoli. Store leftovers in an airtight container for up to 3 days.
