A healthier twist on traditional fried rice, using grated cauliflower for a vibrant and nutritious meal.

  • 1 head cauliflower, grated
  • 2 tablespoons vegetable oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 2 eggs, beaten
  • 3 tablespoons soy sauce (or tamari for gluten-free)
  • Salt and pepper to taste
  • Green onions, chopped (for garnish)

Instructions

  1. Heat the vegetable oil in a large skillet over medium heat. Add the onion and garlic, sauté until softened.
  2. Stir in the mixed vegetables and cook for another 2-3 minutes until they’re vibrant and tender.
  3. Push the vegetable mixture to the side, pour the beaten eggs into the pan, and scramble until fully cooked.
  4. Add the grated cauliflower and soy sauce to the pan. Stir well to combine everything and cook for about 5-7 minutes until the cauliflower is tender but still has a slight bite.
  5. Season your fried rice with salt and pepper to taste, ensuring every element is perfectly balanced.
  6. Garnish with chopped green onions before serving, adding a fresh pop of color and flavor.

Notes

Feel free to use frozen mixed vegetables and experiment with different veggies. Pre-riced cauliflower is a great time saver!
