Transform humble cauliflower into light and fluffy gnocchi, perfect for pairing with your favorite sauces.

Ingredients

  • 1 head cauliflower
  • 1 cup all-purpose flour (or gluten-free flour)
  • 1 large egg
  • Salt to taste
  • Pepper to taste
  • Optional: Parmesan cheese, herbs

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the cauliflower into florets and steam until tender.
  3. Let the cauliflower cool, then pulse in a food processor until smooth.
  4. In a bowl, combine the cauliflower puree with the egg, flour, salt, and pepper, mixing until a dough forms.
  5. Roll the dough into ropes and cut into small pieces to shape the gnocchi.
  6. Boil a pot of salted water, then drop in the gnocchi. Cook until they float to the surface.
  7. Serve with your choice of sauce, or sauté in butter with herbs.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days.
