Slow Cooker Cheddar Corn with Bacon

A rich, creamy slow cooker dish featuring sweet corn and crispy bacon that warms the heart and fills the belly.

  • 6 slices bacon
  • 4 cups corn kernels (fresh or frozen)
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1 cup shredded cheddar cheese
  • 1/2 cup heavy cream
  • 2 tablespoons unsalted butter
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon chopped fresh parsley

Instructions

  1. Cook the bacon in a skillet over medium heat until crisp. Transfer to a paper towel–lined plate to drain, leaving the bacon fat behind.
  2. Prepare the bacon by chopping it into bite-sized pieces once cooled.
  3. Combine the chopped bacon, reserved bacon fat, corn, onion, garlic, butter, garlic powder, onion powder, salt, pepper, and heavy cream in a slow cooker. Stir until well combined.
  4. Slow cook on low for 2 to 3 hours, stirring halfway through.
  5. Add the shredded cheddar cheese about 30 minutes before serving, allowing it to melt and distribute evenly.
  6. Garnish with freshly chopped parsley before serving.

Notes

For a lighter version, use turkey bacon instead of regular bacon. Leftovers can be stored in an airtight container for up to 3 days.
