6 slices bacon
4 cups corn kernels (fresh or frozen)
1/2 cup chopped onion
2 cloves garlic, minced
1 cup shredded cheddar cheese
1/2 cup heavy cream
2 tablespoons unsalted butter
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon chopped fresh parsley
Instructions
Cook the bacon in a skillet over medium heat until crisp. Transfer to a paper towel–lined plate to drain, leaving the bacon fat behind.
Prepare the bacon by chopping it into bite-sized pieces once cooled.
Combine the chopped bacon, reserved bacon fat, corn, onion, garlic, butter, garlic powder, onion powder, salt, pepper, and heavy cream in a slow cooker. Stir until well combined.
Slow cook on low for 2 to 3 hours, stirring halfway through.
Add the shredded cheddar cheese about 30 minutes before serving, allowing it to melt and distribute evenly.
Garnish with freshly chopped parsley before serving.
Notes
For a lighter version, use turkey bacon instead of regular bacon. Leftovers can be stored in an airtight container for up to 3 days.
