  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 cup diced vegetables (like bell peppers, spinach, or onions)
  • Salt and pepper to taste
  • Cooking spray or oil for greasing the muffin tin

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a muffin tin with cooking spray or oil to prevent sticking.
  2. Whisk together the eggs and cottage cheese until well combined, creating a creamy mixture.
  3. Stir in the shredded cheese and diced vegetables. Season with salt and pepper.
  4. Pour the egg mixture into the greased muffin tin, filling each cup about 2/3 full.
  5. Bake for 20-25 minutes until the egg bites are set and lightly golden.
  6. Let them cool before gently removing from the tin. Serve warm or refrigerate for later.
